Unlimited Community Agriculture Cooperative (UCAC) proudly celebrated its 11th annual Save Rural America Conference on Friday, January 23, 2026. What began with a helping hand from Mr. Frank Taylor has grown into a powerful movement led by Mr. Orlando Trainer and a dedicated team committed to empowering rural communities through dependability, excellence, and self-determination.
Orlando Trainer opened with a prayer and blessed the food, setting the tone for gratitude. Mr. Frank Taylor, Winston County Self Help Cooperative (WCSHC), addressed the attendees while also commending UCAC on the great work they have done in Oktibbeha Co., and how they have expanded by empowering the community with a wealth of knowledge in the world of Agriculture. Of course, Mr. Taylor ended with a memorable and funny story.
Afterwards, UCAC served a delectable lunch which included Glazed Ham, Pulled Pork, Goat Stew (served over rice), and Grilled Pork Chop. For sides, Field Peas, Fresh Greens, Fresh Green Beans, Pinto Beans w/Pork Belly, just to name a few.
Once everyone was served and seated, the conference continued by inviting Margeria Smith, Extension Associate with Alcorn University. Ms. Smith’s presentation was titled “Eyes in the Sky: How Drone Technology is Advancing Sustainable Agriculture,” explaining how drone technology enables farmers to survey large areas efficiently and assist with crop spraying, saving time and resources.
Next, Mr. Freddie Davis, Director of the Rural Training and Research Center with the Federation of Southern Cooperatives / Mississippi Association of Cooperatives (MAC), shared information about employment opportunities for individuals willing to travel and expand their skills. The Federation also introduced Mr. Ken Harris, Regional Outreach Specialist and experienced beekeeper, who announced upcoming classes for those interested in becoming beekeepers.
Mr. John Jones, Retired Assistant State Conservationist for the Natural Resources Conservation Service (NRCS), delivered a powerful presentation on Bridging Generations. He emphasized the importance of blending the wisdom and experience of older farmers with the innovation and technology embraced by younger generations through open communication and shared decision-making.
The conference concluded on a high note with door prizes including pork sausage, pork ribs, and other products donated by local pig farmers. Additional prizes from the Federation included hand warmers and gift cards to the Starkville Co-op.
The UCAC conference was a success, reflecting their continued commitment to strengthening rural communities and ensuring a sustainable agricultural future.
